Slow Mornings and Banana Pancakes

Some mornings are for early rising, sweating in a gym class or a sunrise walk with coffee. This practices discipline. Provides you with strength.
But some mornings ask for softness instead. No alarms, staying in your robe, endless cups of tea, moving slowly, dancing in the kitchen while making banana pancakes. These mornings are you tuning in, allowing rest - this is where the healing happens.
For these mornings:
2 spotty bananas
2 eggs
1 tbsp coconut or Greek yoghurt
2 tbsp buckwheat flour
pinch of salt
vanilla paste
butter for the pan
whipped cream, honey, raspberries to serve
01. Mix together mashed bananas, eggs, coconut yogurt. Add vanilla salt and flour and stir until it becomes a batter.
02. Spoon your batter into a buttered pan and cook gently, flipping once the underside seems cooked.
03. Serve with whatever toppings you desire.
